Daigaku Imo 大学芋

Daigaku Imo is a simple, authentic, and nostalgic Japanese sweet-and-savory snack that has been loved for generations. Made with just Japanese sweet potatoes, oil, black sesame seeds, soy sauce, and sugar, this classic treat delivers big flavor with minimal ingredients.

Ingredients
  

  • 1 Japanese sweet potato (satsumaimo)
  • oil for deep frying
  • 1/2 tbsp soy sauce
  • 2.5 tbsp sugar
  • 1 tsp black sesame seeds

Method
 

  1. Cut off the ends of the Japanese sweet potato, and cut it into chunks.
  2. Soak the potato chunks in cold water for 5 minutes, then drain.
  3. Add the potato to a pot of boiling water for about 3 minutes. Drain again.
  4. Deep fry the chunks on medium heat for 4 minutes. Then turn the heat up for 1 minute, and remove them from the oil.
  5. Add 1/2 tbsp soy sauce and 2.5 tbsp sugar in a small pan in low heat, and melt the sugar.
  6. Toss in the fried potatoes, coating each piece with the sauce.
  7. Sprinkle black sesame seeds over the potato chunks.

Notes

  • Choosing Japanese Sweet Potatoes: Select sweet potatoes that are plump with smooth, clean red skin. If there are any dirty or rough spots, simply peel them off before cooking.
  • Oil for Frying: You can use any neutral oil, but vegetable oil or peanut oil works best for deep-frying and gives a clean, crisp finish.
  • Serving Tip: Daigaku Imo tastes best when served hot from the pan for the perfect texture and glaze.
