Ingredients
  

  • 1 scallion
  • 3 large garlic cloves
  • 1/4 pound beef steak meat
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp butter
  • 1.5 cups warm Japanese white rice
  • 1 tsp white sesame seeds
  • 1 tsp soy sauce

Method
 

  1. Chop 1 scallion.
  2. Press 3 garlic cloves with knife and peel the skin. Slice one half of the garlic and chop the other half.
  3. Remove a little of the meat fat on the edge and save that for later. Sprinkle salt and black pepper on one side of the meat.
  4. Heat the frying pan over high heat and add a small piece of the beef fat. When smoke starts to come up, place the steak meat in the pan. The side with salt and pepper should go down first, then sprinkle more salt and black pepper on the top side.
  5. Wait for a few minutes until about 1/3 of the lower part of the meat changes color. Then flip it and cook for another 1 to 2 minutes. Do not overcook, medium-rare is ideal at this point.
  6. Place the steak on aluminum foil and wrap it. Let it rest for 1-2 minutes, then open the foil.
  7. Slice the steak.
  8. In a wok, add a small piece of beef fat, 1 tablespoon of butter, and the sliced garlic. Turn the heat to medium and cook until the slices become nicely golden brown. Turn off the heat and remove the garlic slices and the fat from the wok. Discard the fat.
  9. Add the chopped garlic and turn the heat to medium high. Stir-fry the garlic briefly and then add the chopped scallion and continue stir-frying.
  10. Add 1.5 cups of warm Japanese white rice and keep stir-frying.
  11. Add the beef slices and keep on stir-frying.
  12. Add 1 teaspoon of white sesame seeds.
  13. Pour 1 teaspoon of soy sauce around the wall of the wok, then stir well so the soy sauce spreads evenly through the rice.
  14. Serve the rice in a dish and sprinkle the crispy garlic slices on the top.

Notes

• Prepare warm Japanese white rice in advance. Please refer to the recipe for Japanese white rice. If you prefer, you can also use brown rice instead.
• Be careful not to burn the garlic while cooking, as it can become bitter.
• Beef fat can be stored in the freezer. When you need a small piece, you can cut it right after taking it out of the freezer. It is very convenient to keep some on hand.
• The cooking time for the steak may vary depending on its thickness and size. Adjust the cooking time as needed and aim for a medium-rare result, since the meat will cook a little more when it is stir-fried in the wok.
