Method
- Cut a palm size of cabbage into 1/2 inch square pieces.

- In a bowl, add cold water little by little to 1/3 cup of flour, and mix together well.

- Add 1/2 packet of dashi (Japanese broth powder) and then an egg.

- Add cabbage and gently mix together.

- Heat the frying pan and add 1 tbsp of vegetable oil. Add the mixture to the pan. Place thinly sliced pork on top. Cover with a lid and cook for 3 minutes.

- Mix 1 tbsp each of ketchup and Worcestershire sauce, and 1/2 tsp soy sauce and 1 tsp honey.
- Lid off and flip it. Put the lid on again and cook for another 3 minutes.

- Flip one more time and cook another 1 minute uncovered.
- Place the okonomiyaki on a flat dish, and spread the sauce on the top. Add Kewpie mayonnaise. Sprinkle bonito flakes. Sprinkle aonori seaweed flakes if you have them. It's ready! We hope you enjoy your "TOKYOFLAVORS, NEW YORK STYLE" meal! Itadakimasu!

Notes
This is the most basic and authentic Okonomiyaki, a popular Japanese savory pancake. In addition to thinly sliced pork, you can add chopped squid or shrimp for extra flavor. In Hiroshima, the famous version includes raw oysters and yakisoba noodles.
Other delicious Okonomiyaki toppings include cheese, kimchi, and grated yamaimo or nagaimo (Japanese yam). When grated, the yam gives the batter a soft, sticky texture that makes your pancake extra fluffy.
If you have leftovers, wrap them in aluminum foil and store them in the freezer for a quick and tasty meal later.
