Salmon Fried Rice

Salmon Fried Rice 鮭チャーハン

A quick, healthy, and comforting dish that blends tender baked salmon with perfectly cooked Japanese rice. The rice is rinsed, soaked, and cooked, then stir-fried with flaked salmon and scallions. A sprinkle of sesame seeds adds a nutty finish.
Simple, satisfying, and full of warm flavor — a cozy Japanese meal you’ll want to make again and again.
Servings: 1 person

Ingredients
  

  • about 1.5 cups cooked Japanese white rice
  • about 1/3 pound salmon filet
  • 1 scallion
  • 2 tbsp vegetable oil
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp white sesame seeds

Method
 

  1. Cook Japanese white rice. Follow the video or go to the Japanese White Rice post. Use warm rice for this fried rice.
  2. Sprinkle salt on salmon fillet, and then bake in oven or toaster oven with 425 Fahrenheit for 20-25 minutes until the inside is fully cooked.
  3. Chop 1 scallion.
  4. After the salmon is baked, remove any bones.
  5. Heat a wok or pan and add 2 tbsp vegetable oil. Add chopped scallions and stir-fry on high heat. Add salmon flakes, and keep on stir-frying.
  6. Add about 1.5 cups of warm rice in and keep on stir-frying. Add salt and black pepper to taste. Add white sesame seeds.

Notes

Use warm rice — cold rice is harder to mix evenly in the wok.
Stir-fry quickly after adding the rice. Move the ladle as if cutting through the rice to keep it light and fluffy, not soggy.
Celery can be used as a replacement for onion if you like its flavor.
