Cut off the ends of the Japanese sweet potato, and cut it into chunks.
Soak the potato chunks in cold water for 5 minutes, then drain.
Add the potato to a pot of boiling water for about 3 minutes. Drain again.
Deep fry the chunks on medium heat for 4 minutes. Then turn the heat up for 1 minute, and remove them from the oil.
Add 1/2 tbsp soy sauce and 2.5 tbsp sugar in a small pan in low heat, and melt the sugar.
Toss in the fried potatoes, coating each piece with the sauce.
