Grate fresh ginger and collect the juice. Set aside.
Lay the thinly sliced pork in a shallow dish or tray. Pour 1 tbsp of sake over the pork slices.
For the marinade sauce, add the ginger juice and 2 tablespoons of soy sauce, making sure all the pork slices are equally covered with the sauce.
Cover and press the meat with plastic wrap to help it absorb the marinade better. Leave in the refrigerator for at least 30 minutes, but for more flavor, leave for half a day or so.
Heat a pan with medium high heat, and add 1 tbsp of vegetable oil. Add the marinated pork and cook until the pork changes color.
